Seus frutos normalmente têm se mostrado apenas como um contaminante ambiental, com pouco aproveitamento nos mais diversos setores econômicos. Assim, há a necessidade de aplicação de metodologias de base em análise alimentar para rastrear a qualidade nutricional e funcional de partes comestíveis ou não deste fruto, isolando seus compostos, como o óleo de sua amêndoa. Os resultados da aplicação de tecnologias de extração de óleos, via sólido-líquido, com solventes orgânicos, mostrou uma elevada concentração de macronutrientes em termos quantitativos, com rendimento médio de 52,85%. Quando analisado sob a vertente dos padrões de qualidade da legislação brasileira vigente, o fruto mostrou-se com bom padrão de qualidade expresso pelos seus valores de acidez e peróxido abaixo dos valores preconizados. Sua qualidade funcional, relacionada ao seu perfil cromatográfico, mostrou predominância em ácidos graxos insaturados, com considerável destaque para os ácidos graxos oleico (33,87%), linoleico (22,24%) e linolênico com (0,068%), sendo estes conhecidos respectivamente como ômegas 9, 6 e 3. Estes dados demonstram sua elevada importância para a nutrição, com base nos lipídios funcionais expressos na sua constituição, uma vez que estes são elementos pró e anti-inflamatórios orgânicos, responsáveis diretos pela manutenção da defesa imunológica humana, e não como têm sido predominantemente vistos, como contaminantes ambientais.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[ABSTRACT This aim of this study was to apply analytical technologies to the tropical almond fruits (Terminalia catappa Linn.), in order to add nutritional value to this peculiar fruit of urban areas with classic function of afforestation. Its fruits have been considered only as an environmental contaminant, rarely used in the economic sectors. Thus, it is necessary to apply basic methods in food analysis in order to indentify the nutritional and functional quality of edible and non-edible parts of this fruit, isolating its compounds, as oil from its almond. The results of the application of technologies for oil extraction, by solid-liquid route, with organic solvents showed a high concentration of macronutrients, in quantitative terms, of 52.85%. When analyzed from the aspect of quality standards of the current Brazilian law, the fruit presented a good quality standard expressed by its acidity and peroxide values below the recommended values. Its functional quality related to its chromatographic profile showed predominance in unsaturated fatty acids, with considerable emphasis on oleic fatty acids (33.87%), linoleic acid (22.24%) and linolenic acid with (0.068%), which are known as omega 9, 6 and 3, respectively. These data demonstrate a high importance for nutrition based on the lipids of its functional constitution, since they are pro- and anti-inflammatory agents, directly responsible for maintaining the human immune defense and they may no longer be considered as environmental contaminants.]]></p></abstract>
<abstract abstract-type="short" xml:lang="es"><p><![CDATA[RESUMEN Este estudio tuvo como objetivo aplicar tecnologías analíticas al fruto del almendro de la India (Terminalia catappa Linn.), con vista a agregar valor nutricional a este fruto característico de áreas urbanas con función clásica de arborización. Sus frutos normalmente se han mostrado tan solo como un contaminante ambiental, con poco aprovechamiento en los más diversos sectores económicos. Así, existe la necesidad de aplicar metodologías de base en análisis alimentario para rastrear la calidad nutricional y funcional de partes comestibles o no de este fruto, aislando sus compuestos, como el aceite de la almendra. Los resultados de la aplicación de tecnologías de extracción de aceites, vía sólido-líquido, con solventes orgánicos, mostró una elevada concentración de macronutrientes en términos cuantitativos, con rendimiento promedio de 52,85%. Cuando analizado según los estándares de calidad de la legislación brasileña vigente, el fruto demostró un buen estándar de calidad expresado por sus valores de acidez y peróxido por debajo de los valores preconizados. Su calidad funcional, relacionada al perfil cromatográfico, mostró predominancia en ácidos grasos insaturados, con considerable destaque para los ácidos grasos oleico (33,87%), linoleico (22,24%) e linolénico (0,068%), conocidos respectivamente como omegas 9, 6 y 3. Estos datos demuestran su elevada importancia para la nutrición, en base a los lípidos funcionales expresados en su constitución, una vez que estos son elementos pro y antiinflamatorios orgánicos, responsables directos de la manutención de la defensa inmunológica humana, y no, como han sido predominantemente vistos, contaminantes ambientales.]]></p></abstract>
