MATERIAIS E MÉTODOS:  As amostras foram obtidas em dois períodos do dia, totalizando 18 amostras, as quais foram avaliadas pelo método do número mais provável para coliformes totais e termotolerantes e métodos convencionais para pesquisa de Salmonella sp.  RESULTADOS:  Foi detectada a presença de coliformes em todas as amostras; porém, as obtidas no primeiro período foram consideradas dentro dos padrões aceitáveis para consumo, conforme a Resolução RDC nº 12/2001. No segundo período, 100% das amostras obtidas em duas feiras atingiram valores acima do limite aceitável para coliformes termotolerantes, sendo assim consideradas impróprias para consumo. Apenas as amostras de uma das feiras foram consideradas aceitáveis para consumo. A pesquisa para Salmonella sp. foi negativa em todas as análises.  CONCLUSÃO:  Os resultados demonstram a necessidade de intervenção dos órgãos competentes implantando ações que promovam a conscientização de feirantes que comercializam produtos alimentícios sobre as normas de higiene e manipulação de alimentos, evitando com isto prejuízos à saúde da população.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[ABSTRACT  OBJECTIVE:  To carry out the microbiological evaluation of grated coconut (Cocos nucifera) in natura sold in three open markets in the municipality of Belém, Pará State, Brazil.  MATERIALS AND METHODS:  Samples were collected in two periods of the day, for a total of 18 ones, which were evaluated by the most probable number method for total and thermotolerant coliforms and conventional methods for Salmonella sp.  RESULTS:  Coliforms were detected in all samples, however those obtained in the first period were considered within acceptable standards for consumption according to the RDC Resolution n° 12/2001. In the second period, 100% of the samples obtained in two open markets reached values above the acceptable limit for thermotolerant coliforms and were considered unfit for human consumption. Only samples from one of the open markets were considered acceptable for consumption. Salmonella sp. was negative in all analyzes.  CONCLUSION:  The results show the necessity for intervention by the competent bodies, organizing actions that promote the marketer awareness that sell food under the terms of the hygiene standards and food handling, thus avoiding damage to the population health.]]></p></abstract>
<abstract abstract-type="short" xml:lang="es"><p><![CDATA[RESUMEN  OBJETIVO: Realizar la evaluación microbiológica del coco (Cocos nucifera) rallado, al natural, comercializado en tres ferias libres del municipio de Belém, estado de Pará, Brasil.  MATERIALES Y MÉTODOS: Las muestras se obtuvieron en dos períodos del día, totalizando 18 muestras, las que fueron evaluadas por el método del número más probable para coliformes totales y termotolerantes y métodos convencionales para investigación de Salmonella sp.  RESULTADOS: Se detectó la presencia de coliformes en todas las muestras; pero, las obtenidas en el primer período fueron consideradas dentro de los estándares aceptables para consumo, conforme la Resolución RDC nº 12/2001. En el segundo período, 100% de las muestras obtenidas en dos ferias alcanzaron valores superiores al límite aceptable para coliformes termotolerantes, siendo así, se consideraron impropias para consumo. Solamente las muestras de una de las ferias fueron consideradas aceptables para consumo. La investigación para Salmonella sp. fue negativa en todos los análisis.  CONCLUSIÓN: Los resultados demuestran la necesidad de intervención de los organismos competentes implantando acciones que promuevan la concienciación de feriantes que comercializan productos alimenticios sobre las normas de higiene y manipulación de alimentos, evitando con esto perjuicios a la salud de la población.]]></p></abstract>
