Sua avaliação microbiológica é de grande importância, pois faz parte do cardápio da população de forma geral. O pescado é um alimento perecível devido a sua elevada atividade água (aw) e presença de diversas bactérias de deterioração, estando suscetível à contaminação de microrganismos oportunistas e patogênicos, caso as condições higiênico-sanitárias sejam insatisfatórias. O objetivo do estudo foi avaliar a qualidade microbiológica do tambaqui comercializado na feira municipal de Ariquemes, Estado de Rondônia. Dessa forma, foram coletadas 16 amostras provenientes de quatro boxes e submetidas a análises de quantificação de coliformes totais e Staphylococcus aureus, além da avaliação da presença/ausência de Listeria monocytogenes. Os resultados demonstraram que todas as amostras estavam contaminadas por coliformes totais, enquanto que, em relação ao S. aureus, 37,5% apresentaram índice acima do permitido. Não foi detectada a presença de L. monocytogenes. Conclui-se que as amostras de tambaqui analisadas foram expostas a condições higiênico-sanitárias insatisfatórias.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[ABSTRACT Tambaqui (Colossoma macropomum) is a native fish from the North of Brazil, with a large participation in the economy of Rondônia State and commonly sold in local open market. Its microbiological risk assessment is really important because it is a part of the eating habits of the population in general. The fish is a perishable food due to its high water activity (aw) and the presence of many spoilage bacteria and it is susceptible to contamination of opportunistic and pathogenic microorganisms, if the sanitary conditions are unsatisfactory. The aim of the study was to evaluate the microbiological quality of tambaqui sold in the municipal open market of Ariquemes, Rondônia State. Thus, 16 samples were collected from four boxes and subjected to the quantification analysis of total coliforms and Staphylococcus aureus, as well as evaluation of the presence/absence of Listeria monocytogenes. The results showed that all samples were contaminated by coliforms, regarding to S. aureus, 37.5% were above the allowed rate. It was not detected the presence of L. monocytogenes. It is concluded that the tambaqui samples analyzed were exposed to unsatisfactory sanitary conditions.]]></p></abstract>

Su evaluación microbiológica es de gran importancia, ya que hace parte del menú de la población de forma general. El pescado es un alimento perecible debido a la elevada actividad del agua (aw) y a la presencia de diversas bacterias de deterioro, siendo susceptible a la contaminación de microorganismos oportunistas y patógenos, en el caso de que las condiciones higiénico-sanitarias sean insatisfactorias. El objetivo del estudio fue el de evaluar la calidad microbiológica del tambaquí comercializado en la feria municipal de Ariquemes, Estado de Rondônia. Para tal, se colectaron 16 muestras provenientes de cuatro boxes y se las sometió a análisis de cuantificación de coliformes totales y de Staphylococcus aureus, además de evaluar la presencia/ausencia de Listeria monocytogenes.
